It's been quite busy around here lately. Having a little extra time on my hands, I decided to embark upon a reupholstery project of the utmost difficulty. Ever my father's daughter, my interest was immediately heightened when I noticed a lonely, ugly chair outside a neighbor's apartment. I gathered my strength and knocked, but there was, sadly, no answer. I thought all hope was lost, but later, I ran into her and asked what this poor chair's story was. She said she was about to throw it away and I was welcome to have it for a project. !!! So, I began. Here is what the poor chair looked like before and during "demolition." I'll post the first steps of the painting and reupholstering tomorrow along with other decorating posts inspired by my new space!<br />

I think the 90's (maybe the 80's- i <i>was</i> a fetus) gave this word a bad name. I swear I can remember thinking as a young child, "eat a salad, lose weight." Sad. What's even more crazy sad is real people thinking "as long as there is lettuce somewhere in there, it's healthy." No, silly-pants, tons of cheese and meat and bacon and a cup of blue cheese dressing on lettuce is not healthy. And the whole connotation that goes along with a lady saying, "i'll just have a salad" is silly. Salads can be meals, people, delicious, healthy filling meals. So, while I continue to think of a better name for salads, enjoy some of my favorite lettuce concoctions below. Also, I'm not putting dressing suggestions, but think healthy people, extra-virgin olive oil, other oils and vinegars, or, simply, a mashed-up avocado.<br />
I always start with romaine or romaine hearts or other combos of crunchy lettuces. I like crunch. And I despise baby lettuces. Except baby spinach. I don't know why, but most baby lettuces make me want to vomit. I'm being dramatic.<br />
And then, depending on how I'm feeling that day, I add the following combos (or sub-combos):<br />

1. <b>No Meat. </b>This rule is based mostly on the fact that I don't live on a farm or near a really great farm like <a href="http://www.polyfacefarms.com/">this</a> where I can get meat. I have no qualms with people eating animals. That idea, at its core, is entirely natural. But, I do have serious issue with people eating animals that were not raised humanely and that were slaughtered in gigantic meat production factories. Unless I can see a cow or chicken or pig, etc. from birth until food, I'm not going to eat it.<br />

2. <b>Tons of Veggies and Fruits.</b> Why try to fill ourselves with empty calories and "treats" when there is an abundance of delicious in the produce department? Seriously, I have grown to love Veggies and Fruits and rarely find myself buying anything outside of the Produce department. <br />

3. <b>Buy Seasonally. </b>Buy what is in season - it's usually cheaper and healthier for the environment (i.e. less fossil fuels used getting an orange from chile or spain to cleveland in the middle of February). Also, it just makes sense to eat root vegetables in winter, asparagus and peas in spring, tons of citrus in the summer, and pumpkins and gourds in the fall.<br />

</div>4. <b>Buy Locally. </b>Again, we can all reduce our carbon footprint if we buy things to eat that are local. Or even from the U.S. Often it costs a little more to support the mom & pop bakery or the blueberry farm down the road or the fishermen in the Gulf, or the Citrus farmers in the Rio Grande Valley. But seriously, local always seems to taste better. I am constantly finding amazing Texas foods that are some of the best things I've tasted... ever. Search out your local vendors. It's delicious.<br />
<br />
5. <b>Buy Organics</b>. As often as I can, I buy organically. I totally get that a lot of the organic farms are HUGE conglomerate farms in California and a lot of the produce is really not that much different from conventional produce. But, the extra (possibly false) security I get from eating an organic apple rather than a conventional apple is worth the extra cost. Seriously, there is some crazy stuff getting sprayed on those plants sometimes.<br />
<br />
6. <b>Nothing out of a Box or a Can</b>. Caveat up front: I do not apply this rule to pasta (like, real pasta folks) and some teas that for selling sake have to be in some container. BUT, I do apply it to pretty much everything else. Simply because "food" does not grow in boxes. There are scary things put into stuff that at one time was food to make it last for years. Seriously, I do not want to buy a box of something today that I could eat in 2 years. This rule is the hardest for me, I'll admit. Not when it comes to obvis like pop-tarts, granola bars, crackers, cookies, and mac & cheese, most salad dressings, and all frozen meals, BUT, I often find myself for convenience sake grabbing a can of black beans instead of making my own or grabbing a can of whole tomatoes. I'd LOVE to make black beans and stew my own tomatoes, but sometimes it's just not feasible. I do what I can though, and really try to think about what is actually in those boxes and cans.<br />

There are a ton of other little rules I try and follow, but these 6 are the biggies for me. And if nothing else, <b>think before you eat/</b>put it in the car. Not for this blogger, but most certainly for this blogger's dear friends and family. Vegetarianism has worked amazingly well I must say. I've been Vegetarian for about 7 1/2 months. I don't crave meat, I feel good most of the time and I feel very happy that I'm able to stick to a diet that I feel is socially responsible. <br />
But this Vegan thing? It may be for the birds, kids. Unlike my descent into Vegetarianism, the Vegan decision is a temporary thing. 5 days, in fact. To (a) see if I can do it (undecided) and (b) to see if it makes me feel "cleaner" and "purer." <br />
Yesterday was the first day. I ate chips and salsa. And sorbet. And Vegetables in a Tortilla.<br />
Not TOO shabby.<br />
Today for lunch I had my usual at McAlister's - a veggie pita. BUT, instead of delicious mac and cheese or soup, I went with the fruit cup AND because ranch dressing has milk in it, I went with a balsamic vinaigrette.<br />
I don't like balsamic vinegar.<br />
Like, kind of hate it.<br />
Unless I'm really in the mood for it.<br />
I wasn't really in the mood today.<br />
I also went to the grocery store after work. And when I realized that my 5-day Vegan diet would not allow for road cheese, I almost (a) cried in the cheese aisle, and (b) gave up... in that order.<br />
Seriously, though, this was the most interesting grocery store adventure ever. And Long. SO MUCH STUFF HAS DAIRY IN IT. I also felt like a total idiot asking the lady at the bakery counter if she had any vegan desserts. She clearly gave me the Oh-you're-from-the-city-you-liberal-hippy-vegan-monster look. I guess they don't get that many requests for vegan desserts in East Texas. I ended up buying 2 apples, hummus, pita, romaine, cherry tomatoes, olive oil vinaigrette, and dark chocolate. I'm 90% sure none of the above has dairy in it. Ok, 80% sure.<br />
So we'll see how this goes. I'm eating hummus and pita right now abd craving cheese cubes. I assume cheese cravings with be the theme of this week. Along with the theme of working long hours and making huge life decisions. Again, per usual.<br />

Alert. This post is neither fashion nor decor related. No overt light-heartedness today, folks. Today (or next week, rather) is decision making time. I was extended an offer to join the 2011 <a href="http://www.teachforamerica.org/">Teach for America Corps</a> in the Mississippi Delta. "Wait, wait," you say, "didn't she go to law school, take the TEXAS bar exam, and start doing Oil and Gas law recently?" Yes Missy, I did. And now I must make a BIG decision. Do I stay with the firm at which I'm currently working doing the kind of work I went to law school for? OR do I take a gigantic risk, move to Mississippi/Arkansas, and teach Mathematics? Do I stick with comfort and status quo or do I take a leap of faith and follow a dream? I'm sure by that comparison you can already tell which way I'm leaning. But I'm scared. If I choose the risk, I'm going to take a pay cut. I'm going to move somewhere I never thought I'd live. It'll be hard. Like, really hard. <br />
<div>And, as I ponder which next steps I'll take, I'm reminded of the President's words:</div><div>“Over the next ten years… we want to prepare 100,000 new teachers in the fields of science, technology, engineering and math." Wasn't I just offered the chance to be one of those teachers?</div><div>But what about my law degree? And what about the fact that I'm good at being a lawyer? Am I, as some in the law profession told me, throwing my law career away?</div><div>I mean, I didn't go to law school with some warm, feel-good, fuzzy feeling to change the world. In fact, as the debt started growing, I thought that I better had get a good, high-paying job to pay off my "house" of loans. But I found happiness in helping out the accused, the victims, and those no one else helped out. I worked my tail off, for free, throughout law school at various government offices and a free legal clinic. And I LOVED it. Because I have a passion for people and I want a career that makes my soul feel good. </div><div>So, folks. I'm 50/50 now. Not leaning one way or the other, but more like leaning both ways. I'm like 80/80. And I'm praying for wisdom...<br />

In Texas especially, spring (and spring-like-weather) is more often associated with no-shoes than with. Even though the title of this post may be a bit "wrong," the shoes I've listed below most certainly are not "wrong." In fact, these shoes are espadrilles - i.e. made for spring. I love love love these shoes for the kind of perfect weather that is upon us down South!
